A unique expression of its terroir, this monovarietal, organic Extra Virgin Olive Oil stands witness to the amorous relationship we have with our land and the determination to not let disaster prevail. Sourced solely form those few revived Koroneiki olive trees of our awarded, mountainous Vavatsinia grove, which after being devoured by the 3rd July 2021 fire, haughtily disdained catastrophe to enunciate a sensorial rupture.

With a delicate pungent and bitter character, and notes of cherry tomato, tomato leaf, olive leaves, freshly-cut grass, artichoke stems and sweet spice, this medium, well-balanced olive oil is also excitingly high in antioxodant polyphenols like oleocanthal, oleacein and hydroxytyrosol.
